I made these for a friend’s birthday this week.  She really likes Hello Kitty and I found this idea online and decided to surprise her with some cute cupcakes!  She loved them!

Granola Bars

Well, today was “date day” and my friend Kat and I made Emeril Lagasse’s granola bar recipe.  They are fantastic!!  They are really tasty and very filling (we cut them into 2-inch by 2-inch squares).  We doubled the recipe so we’d each have a full batch.  My house smelled so warm and toasty while the granola mixture was toasting!  We topped one pan with chocolate chips and one with peanut butter chips. YUM!  Pics are on the way!

“Date Day”

My friend Kat and I get together at least once a week for a “date day” (her boyfriend says I am trying to domesticate her).  We usually try to make something that involves a new culinary technique or something that is a new recipe for the both of us.  This week we will be making Emeril Lagasse’s recipe for granola bars!  This is courtesy of Janine and her blog, Cheap Cookin’ Mama–check it out at http://cheapcookinmama.blogspot.com/ .  It’s a great blog with lots of great recipes and tips for streching your dollar in the kitchen and letting nothing go to waste!  I’ll post pics soon of the yummy treats from our latest “date day”!

These were delicious!  Dark chocolate cupcakes with marshmallow buttercream frosting, a Hershey’s chocolate square and graham cracker crumbs.  YUM!!  The frosting was probably one of the best frostings I’ve ever tasted!  It’s from the book HELLO, CUPCAKE…here’s the recipe:

1 container (16 oz.) Marshmallow Fluff

3 sticks unsalted butter, softened and cut into 1-inch pieces

1 tsp. vanilla extract

1/2 cup confectioner’s sugar, plus additional sugar, if necessary

Spoon the Marshmallow Fluff into a large bowl.  Beat with an electric mixer on low.  Gradually add the butter pieces, beating well after each addition, until smooth.  Add the vanilla extract and the 1/2 cup confectioner’s sugar.  Scrape the bowl well to incorporate.  Add more confectioner’s sugar, if necessary, to adjust the texture.

Although I haven’t perfected the Wilton Rose, I don’t think this is too bad for my first attempt!  I definitely have the concept down, however my frosting was not cooperating (it was a little too soft, from the August heat)  I still think it’s pretty!
